Weekend Waffles

Making a big breakfast on either Saturday or Sunday has been a tradition around our house for years now. For me, it just makes so much sense. After a week of rising early and rushing around to get everyone where they need to be in the mornings, it’s so nice just to chill one morning a week. There’s nothing better than a slow Sunday.

Lounging around in our pajamas and then making a late breakfast together are the memories I want my kids to remember forever. It’s a fun tradition! 

Over the years we have mastered an amazing buttermilk waffle recipe. They are so so good and you can dress them up however you like. Two of our favorites are Chocolate Chip and chopped bacon bits. There’s just something about the salty/savory waffles with the sweet syrup! There are a hundred other ways to create your waffles. Just use your imagination! Then go pour yourself a hot cup of coffee or maybe even a mimosa and get to cookin’! 

Directions:

  •   I like to take out the eggs, melt the butter, and pour the buttermilk a half an hour before making the waffles. It all comes together better if the ingredients are at room temperature.
  •   When you begin to make the batter, turn on the waffle iron to get it nice and hot.
  •   Melt the stick of butter in a heat-proof measuring cup. Set aside to cool.
  •   In a large batter bowl, measure out the flour, baking powder, baking soda, sugar, and salt. Stir well to combine ingredients. Create a well in the center of the dry ingredients for the buttermilk mixture.
  •   Beat the eggs in a large pourable measuring cup until frothy and well-combined. Add the vanilla extract, buttermilk, and cooled butter. Beat until well-combined.
  •   Pour the buttermilk mixture into the dry ingredient’s hole/well and stir rapidly with a whisk until well combined. There will be an immediate chemical reaction with the buttermilk and will create a thick, rich batter with air bubbles.
  •   Using a large soup ladle, pour 1/4 of the batter onto your waffle iron plates and bake until steam stops rising from the waffle iron or your personal degree of doneness is achieved. I’ve found that my waffle maker takes about 6 minutes. My husband likes them fluffy on the inside and crispy on the outside.
  • I then use tongs to take the waffle off of the hot iron and onto a plate. 
  • If you are making multiple waffles, I suggest turning on your oven to 200*F and then placing your waffles onto a cookie sheet (preferably with a wire rack on top) and placing them in the oven. This will help keep the waffles warm and fresh while you are making more waffles or finishing up other elements of your breakfast.

-Strawberries & Whipped Cream

-Peanut Butter

-Keep it simple with melted butter and warm maple syrup

  •   1/2 cup butter, melted and cooled 
  •  3 eggs, large
  •  1 1⁄2 cups buttermilk
  •  1 1/2 teaspoons vanilla extract
  •  1 3⁄4 cups all-purpose flour
  •  2 teaspoons baking powder
  •  1 teaspoon baking soda
  •  2 teaspoons sugar
